Taco Bell Corp. is a California-based fast service restaurant chain that specializes in Mexican style fast food. Taco Bell--with 1995 sales in the United States of $3.5 billion dollars--held the largest share of the Mexican-style restaurant market in the United States. In mid-1997 the fast food chain was owned by the giant PepsiCo empire and was expected to soon become part of the restaurant holding company TRICON Global Restaurants, Inc., a far cry from its modest beginnings as a hot dog stand.




Fiesta Rice Bowls

Taco Bell Copycat Recipe

Serves 4

1 (7 oz) package of spanish Rice-A-Roni
1 (14 1/2 oz) can diced tomatoes
1 (15 oz) can chili with beans
1 (16 oz) can beef tamales (paper removed)
1 cup shredded cheddar cheese

Prepare rice according to package directions. Spoon chili into 8 inch square baking dish'. Cut up the tamales into 1 inch pieces. Top the chili with the tamales. Heat mixture (covered) in microwave for 4 minutes on high. Add the rice and cheese on top and finish microwaving until the cheese melts on top-3 minutes on high.

Notes:  You can add seasoned taco meat, grilled chicken or steak to make this a hearty meal.
